Blueberry Protein Chia Pudding


Ingredients:

1 Cup frozen blueberries

1 Cup Cottage Cheese

1 TSP Vanilla Extract

1 TSP honey or maple syrup

1 TBSP Chia Seeds

1 Serving Protein Powder (We use Arbonne Vanilla or Strawberry)

1/4 Cup Milk or Milk Alternative

Optional toppings:

Whipped Cream

Fresh Berries

Granola


Instructions:

  • Blend the Base: Add Blueberries, cottage cheese, vanilla, honey, protein, and milk to a blender or food processor. Blend until Smooth.

  • Stir in Seeds: Pour the mixture into jars & stir in chia seeds. Let sit for 1 hour, stirring once 1/2 way through to prevent clumping.

  • Chill: Cover & refrigerate for 2+ hours or overnight until thickened.

  • Top & Serve: When ready to eat, top with whipped crem, fresh berries, and a sprinkle of granola. ENJOY!
