Blueberry Pistachio Salad


This Blueberry Pistachio Salad is a delightful mix of sweet, salty, and crunchy that you can’t get enough of. Toas in some mixed greens to round out the flavors and drizzling it with a light vinaigrette to balance the richness of the nuts. It’s a refreshing salad that works beautifully as a side dish for almost any meal, or even as a light lunch on its own. Plus, the vibrant colors make it as beautiful as it is delicious! Yum!!


Serves 4


Ingredients:

  • 4 cups mixed greens (spinach, arugula, etc.)

  • 1 cup fresh blueberries

  • 1/2 cup pistachios, shelled and roughly chopped

  • 1/4 cup goat cheese or feta, crumbled (optional)

  • 1/4 cup red onion, thinly sliced

For the Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey or maple syrup

  • Salt and pepper to taste


Instructions:

  1. In a large bowl, combine the mixed greens, blueberries, pistachios, goat cheese (if using), and red onion.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

  3. Drizzle the dressing over the salad and toss gently to combine.

  4. Serve immediately for a refreshing and colorful dish.
